EASIER than Pale Lager: Brewing a CREAM ALE with KVEIK Yeast | Grain to Glass | How to Cereal Mash

In this video, I brewed one of the only styles of beer ever to originate in the United States: Cream Ale. Contrary to the name, cream ale has no cream or lactose in it, and it basically just a lightly hopped all pilsner beer with some corn adjunct. It turns out this tastes very similar to an American Pale Lager, except fermented with ale yeast instead. A good option for brewers who want lager character but dont have the fermentation setup for lagering. Also I cover how to do a cereal mash: where you can extract sugars from unmalted grains: wheat, oats, corn, rice, etc. Overall this beer turned out pretty good. Unfortunately it didnt drop 100% clean but tasted clean, with a slight lemon note. Very pleasant and super refreshing.

The recipe for 5.5 gallons is below, your efficiency may vary:
“Sunbeam”

5.9% ABV 22 IBU

8.5 lb American Pilsner (85%)
0.5 lb Cornmeal (5%)
1 lb Table Sugar (10%)

Single Infusion Mash for 60 min at 150 F (65 C)
Cereal mash cornmeal with 20% by weight malted barley at 158 F (70 C)

Water (ppm): Ca: 25, Mg: 9, Na: 65, SO4: 65, Cl: 100, HCO3: 36

60 minute boil:
60 min – Add 0.4 oz (11g ) Galena (12.9% AA)
10 min – Add 0.4 oz (11g) Galena
0 min – Add 0.2 oz (5g) Galena

OG: 1.049

1 tsp Hornindal Kveik

Ferment 75 F (24 C) for 1 week

FG: 1.004
