Ginger Bug – Hard Apple Cider Success

This was an experiment to see how well my Ginger Bug would work on brewing some Hard Apple Cider.

Followed a recipe from Bearded and Bored using 1 Gallon of Apple Juice (which I freshly juiced), and 3 cups of brown sugar. I ended up with a starting gravity of 1.114.

It has been going for 19 days as seen in this progress video. I decided to test the gravity again tonight even though it was still bubbling and found that it is now at .0992 and 16% alcohol.

Around 5 minutes after I opened the brew and tested the gravity the bubbling stopped. I think if I had added more sugar it would have probably kept on going. The Ginger Bug supported a much higher alcohol content that an I was initially expecting. So I can consider this experiment a success. Now I just need to decide if I want to sweeten it up some and carbonate it, leave it as is, or make some Apple Jack.
